Elevation Restaurant serves as the “real life” capstone course for both the Culinary Arts and Baking & Pastry Arts programs of the Cascade Culinary Institute. The restaurant provides a collaborative learning environment where guest feedback is integrated into the students’ competency-based learning experience. Students also learn the importance of utilizing seasonal and locally grown foods from regional farmers and producers.

The Spring 2024 Wednesday and Thursday Lunch Menu will be posted in early April.

    • Midway through the COCC term, the lunch menu changes weekly and features student-created dishes.

The Spring 2024 Monday and Tuesday Dinner Menu will be posted in early April.

    • New for Spring 2024: Asian Fusion Multi-Course Tasting Menu, where guests will be presented with a series of dining experiences.
    • $48 per person plus beverages
    • Tasting menu will include:
      • Thai basil butter, Ginger Lemon Grass, and Shosito Pepper Corn Bread
      • Soba Salad with Fried Shallot, Cabbage, and Citrus Soy Vinaigrette
      • Crème Fraiche Sesame Chip Roasted Acorn Squash
      • Smoked Cedar Plank Salmon with Thai Chili and Egg Fried Rice
      • Rustic Ramen Tonkatsu Broth and Tare Braised Short Rib
      • Tea Cake Trio (Chai, Thai, Green Tea)

  • The Food Truck Operations class will focus on business operations, field trips, and collaborations in the initial weeks of the COCC spring term.
