Elevation Restaurant serves as the “real life” capstone course for Cascade Culinary Institute students. The restaurant provides a collaborative learning environment where guest feedback is integrated into the students’ competency-based learning experience. Students rotate roles within the cooking and service components of the restaurant  and take a lead role in menu development. Students learn the importance of utilizing seasonal and locally grown foods from regional farmers and producers.
